Description
This peach watermelon summer salad is full of refreshing summer ingredients and will be sure to brighten up your day. The peach and watermelon bring juicy sweetness that nicely contrasts the peppery arugula. Toss it all together with a simple balsamic dressing to tie all the flavors together.
Ingredients

- 2 peaches, thinly sliced
- 2 cups watermelon, cubed
- 4-5 cups of arugula
- ¼ cup red onion, thinly sliced
- 1 avocado, thinly sliced
- ¼ cup sliced almonds
For the Balsamic Dressing:
- ¼ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- 1 clove garlic, minced
- 1 teaspoon agave
- 1 teaspoon dijon mustard
- pinch of salt
Instructions
- Make the balsamic dressing. Add the olive oil, balsamic vinegar, garlic, agave, dijon mustard and pinch of salt in a jar with a lid. Shake until combined. Set aside.
- Assemble the salad as individual servings or on one large serving dish.
- Spread out the arugula as the base layer.
- Add the watermelon, sliced peaches and sliced avocado.
- Top with sliced red onion and sliced almonds.
- Drizzle with balsamic dressing & enjoy!
Notes
- I LOVE this homemade balsamic dressing, however store bought dressing will taste just fine!
- This recipe will make enough for 4 side salads or 2 full sized salads.
- You can substitute honey for the agave in the dressing.
