This vegan chocolate peppermint-tini is the perfect winter cocktail! Think peppermint hot chocolate but make it chilled and boozy. This simple cocktail is easy to whip up and can be made with only a few ingredients!
- ½ cup light coconut milk
- 1 tbsp chocolate syrup
- 2 oz peppermint schnapps
For the rim (optional):
- 1 candy cane, crushed
- 1 tsp agave
For the rim:
- Put the candy cane or peppermint candies in a plastic bag, or in between two sheets of parchment paper. Gently smash the candies with a rolling pin until they become small pieces. Put agave on a small plate and roll the rim of your martini glass (or whatever glass you're using) into the agave until the rim is coated. Next, roll the rim in the peppermint candy pieces until the rim is lightly coated.
For the cocktail:
- In a cocktail shaker or jar with a lid, combine the light coconut milk, chocolate syrup and peppermint schnapps. Shake until combined. Gently pour into your martini glass and enjoy!
- You can use agave, honey, or maple syrup on the rim of the glass. Add will add a nice extra touch of sweetness.
