You'll need: kale, beets, goat cheese, butternut squash, pomegranate seeds, pepitas, balsamic vinegar, garlic, dijon, maple syrup and olive oil
Place the beets on foil. Drizzle with olive oil and roast them in the oven for 50 minutes.
Remove from the oven and let the beets cool for ten minutes.
Peel the skin off the beets and cut them into cubes.
Roast the butternut squash in the oven.
Whisk together the balsamic vinegar, garlic, dijon, maple syrup and olive oil.
Massage the kale until it is slightly wilted and more tender.
Add all of the ingredients into a large bowl. Toss together and serve.
