You'll need: celery, carrots, onion, sweet potato, red lentils, ginger, garlic, oil, salt, pepper, tumeric, sage, cumin, veggie broth and coconut milk!
Sauté the diced onion, carrot, and celery in olive oil.
Add the garlic, ginger, turmeric, sage, cumin, salt and black pepper. sauté for another minute until fragrant.
Add the veggie broth, diced sweet potatoes and red lentils. Bring the soup to a boil, then drop the heat to low and simmer for 15-20 minutes.
Once the lentils and potatoes are cooked, stir in the coconut milk until combined.
Garnish the sweet potato lentil soup with cilantro and a few kinds of fresh black pepper. Enjoy!
