Fall Pasta Salad

You'll need: pasta, butternut squash, Brussels sprouts, kale, garlic, olive oil, balsamic vinegar, maple syrup and spices!


Toss the squash, sprouts and whole garlic cloves in olive oil, garlic powder and cayenne pepper. Roast them at 400 degrees for 30 minutes.


Massage the kale with your hands until it is wilted. Set aside.


Cook and drain the pasta according to the package directions. Set aside.


Mix together the balsamic vinegar, roasted garlic, maple syrup and olive oil. Set aside.


Add the roasted veggies, kale, pasta and dressing to a large bowl.


Mix the pasta salad together until combined. Serve and enjoy!
