You'll need: pumpkin, apple, onion, garlic, ginger, veggie broth, olive oil, spices and coconut milk!
Sauce the diced green apple and diced onion together until softened.
Add the minced garlic, minced ginger and spices. Sauce for 1 minute until fragrant.
Add the pumpkin and vegetable broth. Stir well. Bring the soup to a boil, then reduce the heat and simmer for 10 minutes.
Blend the soup using an immersion blender until it is smooth.
Stir in the coconut milk and let the soup heat on low until read to serve.
Garnish the soup with pumpkin seeds, black pepper, and fresh sage leaves. Serve and enjoy!
