    Apple Oat Muffins

    These apple oat muffins are especially perfect for fall. They will also fill your house with a delightful cinnamon apple aroma! Surprisingly, muffins are one of the few things I can bake without fail. I particularly love that these vegan muffins can be made in just 30 minutes! Basically all you have to do is mix up the ingredients and bake! It’s quick, easy and tasty!

    What's in This Recipe?

    • Apples - use what you have on hand or pick your favorite variety!
    • Applesauce - make sure to use unsweetened.
    • Maple syrup - the real stuff, not the fake one!
    • Brown sugar - I use light brown sugar.
    • Non-dairy milk- I usually use oat milk.
    • All purpose flour
    • Rolled oats
    • Baking soda
    • Spices - cinnamon and salt.

    How to Make Apple Oat Muffins

    1. Preheat the oven to 350 degrees.
    2. Add the apples, applesauce, maple syrup, brown sugar and non-dairy milk to a mixing bowl. Mix well.
    3. Add the flour, rolled oats, baking soda, cinnamon and salt to the batter. Gently mix until all ingredients are incorporated. 
    4. Line a muffin tray with baking cups or spray with non-stick spray.
    5. Pour the batter into each well. They should be filled almost to the top.
    6. Bake for 15-18 minutes until a toothpick can be inserted and come out clean.
    7. Let cool for 10-15 minutes and enjoy!

    Tips & Tricks

    • Use baking cups or parchment paper to keep this recipe oil-free!
    • I always leave the skin on the apples. Don’t waste your time peeling them, I find it unnecessary!
    • Mix the wet ingredients first then add in the dry ingredients.
    • Bake times may vary depending on your oven.

    Ingredients

    Scale
    • 1 ½  cup apples, chopped (about 1 large apple)
    • ½ cup unsweetened applesauce
    • ¼ cup maple syrup 
    • ¼  cup brown sugar 
    • ¼ cup non-dairy milk
    • 1 ¼ cup all purpose flour
    • ½ cup rolled oats
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • ¼ tsp salt
