This comforting and easy-to-make broccoli egg bake features tender broccoli and melted cheddar cheese. It's perfect for a hearty vegetarian breakfast or brunch!
3cupsbroccoli floretsabout 2 crowns, cut into bite-sized pieces
½cupmatchstick carrots(or grated carrots)
10large eggs
¾cupextra creamy oat milk(or milk of your choice)
½cupextra sharp cheddar cheeseshredded
½teaspoonsea salt
¼teaspoonblack pepper
non-stick cooking spray
Instructions
Preheat the oven to 350 degrees Fahrenheit.
Sauté the onion, broccoli and carrots in olive oil over medium heat for 8-10 minutes. The vegetables should be bright in color and the broccoli should still have a bit of firmness to it when done.
Whisk together the eggs, milk, cheddar cheese, salt and pepper in a large mixing bowl.
Spay a 9x13 baking dish with non-stick cooking spray. Add the sautéed veggies to the dish and pour the egg mixture over the veggies.
Bake for 30-35 minutes until the eggs have set.
Notes
You can use frozen broccoli instead of fresh if needed.
Feel free to use any milk of your choice in this recipe, I just prefer oat milk.
I recommend buying a block of cheese and grating it yourself, rather than buying pre-shredded cheese. It will melt better and has more flavor.
Egg bake freezes well in an airtight container for up to 3 months.
You can also turn this into breakfast sandwiches by adding a slice of egg bake on an English muffin!
