I love making this broccoli and cheese egg bake for meal prep! Enjoy it on its own or turn it into a breakfast sandwich by adding a slice of egg bake on an English muffin.
The flavors of this dish were actually inspired by cheesy, broccoli cheddar soup! I wanted to create a tasty breakfast dish that replicated the comforting flavors. I use extra creamy oat milk in this recipe, but feel free to use your go-to milk choice.

One of my favorite things about an egg bake is you can freeze it for up to 3 months! I like to pre-cut it so I can just take a slice out when I want. Simply thaw it in the fridge overnight or warm it up in the microwave for about 2 minutes. Delicious!
Key Ingredient Notes

- Broccoli - I recommend using 2 crowns of fresh broccoli for this recipe. You will need about 3 cups of florets. You can use frozen broccoli in a pinch. Frozen vegetables are often more affordable than fresh veggies. Sauté the frozen broccoli in the same way you would with fresh broccoli in this recipe.
- Matchstick carrots - Buy pre-cut matchstick carrots to make this recipe super simple! Otherwise you can shred the carrots using a box grater.
- Cheddar cheese - shred your own cheese if possible, instead of buying shredded cheese in a bag. It will have more flavor!
Step by Step Instructions

- Step 1: Sauté the onion, broccoli and carrots.

- Step 2: Whisk together the eggs, milk, cheese & seasoning.

- Step 3: Add the veggies and egg mixtures to a 9x13 baking dish.

- Step 4: Bake for 30 minutes or until the eggs have set.

Hint: Spay the baking dish well with non-stick cooking spray!
Emily's Top Tip
"For the best tasting casserole, buy a block of cheddar cheese and grate it yourself! Don't buy the pre-shredded cheese; it does not have as much flavor and will not melt as well in the oven. Pre-shredded cheese is coated with non-caking agents so it doesn't clump together in the bag. There is nothing wrong with this, but it makes it more difficult for the cheese to melt in the oven."


Broccoli Cheddar Egg Bake
Ingredients
- 2 tablespoons olive oil
- 1 yellow onion diced
- 3 cups broccoli florets about 2 crowns, cut into bite-sized pieces
- ½ cup matchstick carrots (or grated carrots)
- 10 large eggs
- ¾ cup extra creamy oat milk (or milk of your choice)
- ½ cup extra sharp cheddar cheese shredded
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- non-stick cooking spray
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Sauté the onion, broccoli and carrots in olive oil over medium heat for 8-10 minutes. The vegetables should be bright in color and the broccoli should still have a bit of firmness to it when done.
- Whisk together the eggs, milk, cheddar cheese, salt and pepper in a large mixing bowl.
- Spay a 9x13 baking dish with non-stick cooking spray. Add the sautéed veggies to the dish and pour the egg mixture over the veggies.
- Bake for 30-35 minutes until the eggs have set.
Notes
- You can use frozen broccoli instead of fresh if needed.
- Feel free to use any milk of your choice in this recipe, I just prefer oat milk.
- I recommend buying a block of cheese and grating it yourself, rather than buying pre-shredded cheese. It will melt better and has more flavor.
- Egg bake freezes well in an airtight container for up to 3 months.
- You can also turn this into breakfast sandwiches by adding a slice of egg bake on an English muffin!
