Simple Air Fryer Diced Potatoes

Air fryer diced potatoes are crispy on the outside and fluffy on the inside. Seasoned with spices and paprika to perfection, they are sure to be a hit! Enjoy them at breakfast, lunch or dinner as a delicious side!

Ready in 30 minutes or less, these air fryer breakfast potatoes are a great additional to any meal! I often just eat a bowl of these as a mid morning pick-me-up!

These crispy cubed potatoes pair well with a breakfast tofu scramble, sandwiches for lunch, or even vegan sloppy joes!

Try dipping them in classic ketchup, vegan ranch, spicy sriracha sauce or creamy greek yogurt dill dip!

  • This delicious air fryer side dish can be made in under 30 minutes! This method does not require soaking the potatoes beforehand; there is minimal prep involved.
  • Potatoes are a healthy and budget-friendly food! They are high in potassium and fiber.
  • It's easy to prepare! Simply wash and cut the potatoes, toss them in seasoning and air fry them! There is no need to peel the skins off as long as you give them a good wash.

Equipment Needed

You will need an air fryer for this recipe. I highly recommend a Gourmia air fryer. I have a similar model that I absolutely love! In addition to an air fryer, you will need a cutting board, knife and mixing bowl.

Ingredient Notes

Overhead of four white potatoes, fresh parsley and small bowls of olive oil and dried spices.
  • Potatoes - I like using white potatoes or russet potatoes for this recipe, but you can use whatever variety you have on hand.
  • Olive Oil - this helps the potatoes crisp up on the outside. You can use other oils such as avocado oil as well.
  • Spices - garlic powder, onion powder, paprika, parsley and salt.
  • Fresh herbs - for garnishing the potatoes. I like using parsley, green onions or chives!

Substitutions and Variations

  • Potatoes - use any variety you like. I typically use russet potatoes for this recipe, but you can use white potatoes, red, Yukon gold or even sweet potatoes!
  • Spicy - add ¼ teaspoon of cayenne pepper.
  • Parmesan and garlic - when the potatoes are done top them off with 2 tablespoon of parmesan and a clove of minced garlic.
  • With onions - add 1 yellow onion cut into cubes to the air fryer along with the potatoes. The diced onion will add lots of flavor!

Step by Step Instructions

Dice the potatoes. Cut the potatoes into evenly sized cubes. This will ensure they cook evenly.

Add the potatoes to a mixing bowl along with olive oil, garlic powder, onion powder, paprika, parsley and salt.

Toss the potatoes together with the spices and oil until they are mixed well.

Add the potatoes to a preheated (400 degrees Fahrenheit) air fryer basket.

Air fry for 18 minutes, shaking the basket once half way though cooking.

Garnish with fresh herbs such as parsley, scallions or chives. Enjoy!

Hint: keep the potatoes in a single layer in the air fryer to achieve maximum crispiness! If necessary you can air fry them in multiple batches.

Health Benefits of Potatoes

There are several health benefits in eating potatoes. There are loaded with antioxidants, high in potassium, vitamin C and fiber. Furthermore, different varieties of potatoes provide slightly different nutrients. Try making this recipes using different variety of potatoes for various nutritional benefits!

Storage and Reheating

Let the air fryer diced potatoes cool to room temperature before storing them in an airtight container. They will last in the fridge for up to 5 days!

Use the air fryer to reheat the cubed potatoes. Throw them in the air fryer basket at 400 degrees for 3-5 minutes. They will become warm and crispy again!

Top tip

Try to cut the potatoes into the same sized cubes! This will help them cook evenly in the air fryer. Note: cooking time can vary from air fryer to air fryer depending on the model.

Frequently Asked Questions

How long do I air fry diced potatoes at for 400 degrees?

I recommend air frying diced potatoes for 18-20 minutes at 400 degrees. They will become nice and crispy on the outside but stay fluffy on the inside!

Do I need to soak potatoes before air frying?

No, I do not find it necessary to soak the potatoes in water before air frying. While soaking potatoes before cooking can help them get crispy, I think they crisp up on their own just fine in the air fryer.

Ingredients
  

  • 2 russet potatoes diced (about 1.5 - 2 pounds) and unpeeled
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon dried parsley
  • a pinch of salt less than ¼ tsp
  • ¼ cup fresh parsley roughly chopped

Instructions
 

  • Cut the potatoes into evenly sized cubes. 
  • Add the diced potatoes to a large bowl with oil, garlic powder, onion powder, paprika, dried parsley and salt.
  • Mix the potatoes until they are evenly coated with with spices and oil.
  • Preheat the air fryer for 2-3 minutes at 400 degrees Fahrenheit.
  • Add the potatoes to the preheated air fryer basket.
  • Air fry for 18 minutes at 400 degrees, shaking the basket once half way though cooking.
  • Garnish the potatoes with fresh parsley before serving. Enjoy!

  • Cook time may vary depending on the model of air fryer.
  • Avoid overlapping the potatoes in the air fryer basket to achieve maximum crispiness.
