1cupfrozen spinach(thawed and liquid squeezed out)
⅓cuproasted red pepperdiced
⅓cupkalamata olivessliced in half
⅓cupsun-dried tomatoes packed in oildiced
Instructions
Preheat the oven to 400 degrees Fahrenheit.
Add the cream cheese, garlic powder, pesto, spinach, roasted red pepper, olives and sun-dried tomatoes to a mixing bowl.
Mix well until combined.
Roll one sheet out the puff pastry on a cutting board at a time. Use a rolling pin if necessary to help flatten it out. Spread ½ of the mixture over the pastry evenly. Repeat on the 2nd sheet of puff pastry.
Carefully roll up the puff pastry into a log. Gently push the ends in if needed.
Slice each roll of pastry into 8 equal sized pieces. Gently reshape them if needed into a rounded shape.
Line a baking sheet with parchment paper. Bake 20-30 minutes until pastry is crispy and lightly browned.

Sprinkle a bit of flour on your work surface so the pastry doesn't stick!
If the pastry becomes too sticky, simply pace it back in the fridge to chill for 10-15 minutes.
