I opted for a simple, vegan version of this cocktail because it’s so easy to whip up and can be made with only a few ingredients! Coconut milk has a creamy texture and flavor, making it the perfect companion to the peppermint schnapps and chocolate syrup. Top it all off with a candy cane rim and your taste buds will be singing.

One of my closest friends, Hannah, inspired me to make this winter cocktail. When hanging out during the colder months, she would make us hot chocolate and add a "special ingredient" to make it more fun. This "secret ingredient" comes in a candy cane striped vodka bottle, and can be found in a liquor store. However, for my cocktail I chose to use peppermint schnapps (mostly because my local liquor store did not have the candy cane bottle of vodka). That being said, I think peppermint vodka would work brilliantly with this cocktail. Use what you have access to! If you like a more traditional martini try this hot and dirty martini instead!
To Make A Vegan Chocolate Peppermint-tini:
Put the candy cane or peppermint candies in a plastic bag, or in between two sheets of parchment paper. Gently smash the candies with a rolling pin until they become small pieces. Roll the rim of the martini glass (or whatever glass you're using) into the agave until there is thin layer around the rim. Next, roll the rim in the peppermint candy pieces until lightly coated. In a cocktail shaker or jar with a lid, add the light coconut milk, chocolate syrup and peppermint schnapps. Shake until combined. Gently pour into your martini glass and finally, enjoy!

Ingredients
- ½ cup light coconut milk
- 1 tbsp chocolate syrup
- 2 oz peppermint schnapps
For the rim (optional):
- 1 candy cane, crushed
- 1 tsp agave
Instructions
For the rim:
- Put the candy cane or peppermint candies in a plastic bag, or in between two sheets of parchment paper. Gently smash the candies with a rolling pin until they become small pieces. Put agave on a small plate and roll the rim of your martini glass (or whatever glass you're using) into the agave until the rim is coated. Next, roll the rim in the peppermint candy pieces until the rim is lightly coated.
For the cocktail:
- In a cocktail shaker or jar with a lid, combine the light coconut milk, chocolate syrup and peppermint schnapps. Shake until combined. Gently pour into your martini glass and enjoy!
Notes
- You can use agave, honey, or maple syrup on the rim of the glass. Add will add a nice extra touch of sweetness.
