Watermelon salsa is a refreshing, easy to make appetizer or snack! It comes together in under 10 minutes and is so tasty! I know you may be sceptical… but don’t knock it until you try it! I love the fresh summer time flavors and I think you will too! Save your extra watermelon to freeze and make watermelon margaritas!
To Make Watermelon Salsa:
This recipe is SO simple. You only need 5 ingredients: watermelon, white onion, jalapeno, cilantro and ½ lime. All you have to do is mix all the ingredients up together in a bowl. Serve it with tortilla chips, BBQ cauliflower tacos or BBQ Jackfruit Nachos!

Although this is a simple recipe, I have a couple tips to share with you! First off, I HIGHLY recommend using fresh lime juice rather than bottled. You’ll be surprised at how much better it tastes than the fake stuff from the bottle. Secondly, if you like spicy salsa, do not remove the seeds from the jalapeno. The seeds hold a lot of that heat! Lastly, there is no added salt in this recipe. This is because most of the time you’ll probably eat watermelon salsa with tortilla chips, which are really salty to begin with! I find that the sweetness of the watermelon goes perfectly with the salty chips. Additionally, adding salt to the salsa will cause the watermelon to “sweat” more, resulting in more liquid at the bottom of the bowl. So leave that salt out of there!
