Air fryer diced potatoes are crispy on the outside and fluffy on the inside. Seasoned with spices and paprika to perfection, they are sure to be a hit! Enjoy them at breakfast, lunch or dinner as a delicious side!


Units Scale
  • 2 russet potatoes, diced (about 1.5 - 2 lbs)
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp dried parsley
  • a pinch of salt (less than 1/4 tsp)
  • 1/4 cup fresh parsley, roughly chopped


  1. Cut the potatoes into evenly sized cubes. 
  2. Add the diced potatoes to a large bowl with oil, garlic powder, onion powder, paprika, dried parsley and salt.
  3. Mix the potatoes until they are evenly coated with with spices and oil.
  4. Preheat the air fryer for 2-3 minutes at 400 degrees.
  5. Add the potatoes to the preheated air fryer basket.
  6. Air fry for 18 minutes at 400 degrees, shaking the basket once half way though cooking.
  7. Garnish the potatoes with fresh parsley before serving. Enjoy!


  • Cook time may vary depending on the model of air fryer.
  • Avoid overlapping the potatoes in the air fryer basket to achieve maximum crispiness.
  • Serve potatoes with ketchup, vegan ranch dip or enjoy on their own!
